The ingredients needed to prepare Shukto:

  1. Get 2 of potatoes(medium sized) cut into cubes.
  2. Provide 1 of plantain(kanch kola) cut into small pieces.
  3. Use 3 of shojne danta(drumsticks) cut into small pieces.
  4. Get 1 of brinjal cut into small pieces.
  5. Take 2 of medium sized karela(bitter gourd).
  6. Get 2 of sweet potatoes.
  7. Use 1/4 of pumpkin peeled and cut into small pieces.
  8. Prepare 10 of Bori.
  9. Prepare 1 teaspoon of radhuni seeds.
  10. Prepare 1/2 teaspoon of dhania.
  11. You need 1/2 teaspoon of mustard.
  12. Provide 1 teaspoon of poppy seeds.
  13. Use 1 1/2 teaspoon of ginger paste.
  14. Get 2 of bay leaves.
  15. Prepare 1 teaspoon of panch phoran.
  16. Provide to taste of Salt.
  17. You need to taste of Sugar.
  18. You need 1/2 cup of milk.
  19. Provide of As required mustard oil.
  20. Provide 2 teaspoon of ghee.

Instructions to make Shukto:

  1. Grind a smooth paste of dhania, mustard and poppy seeds.
  2. Heat some oil in a wok and Deep fry the baris.
  3. Heat some in a wok, add panch phoran and bay leaves. Let it splutter and add the bitter gourds. Fry for a minute and then add the rest of the veggies. Add some salt as required. Saute it very well. Add the blended paste, along with ginger paste. Mix it very well for a minute or two..
  4. Add some water and cover it with a lid..
  5. When you feel that the veggies have softened and you got the desired consistency of the gravy, add the milk and some sugar. Let it be sweetish.
  6. Add some ghee. Mix it very well..
